Chipotle Mexican Grill is piloting a food safety risk management platform built on Palantir Technologies' Foundry software, according to a report from WIRED on September 23, 2026. The system combines health inspection scores, pest incidences, and employee illness reports to calculate a food safety risk score for each restaurant location.
Laurie Schalow, chief corporate affairs and food safety officer at Chipotle, stated that the platform aims to provide a more consistent and centralized view of food safety risk across its restaurants. The pilot follows a summer of industry foodborne outbreaks across the United States, as well as Chipotle's 2020 settlement where it paid a $25 million criminal fine after outbreaks sickened over 1,100 people between 2015 and 2018.
The partnership expands Palantir's commercial footprint in the food and beverage industry, joining existing clients such as Tyson Foods, General Mills, and the purchasing cooperative for Wendy's restaurants. Palantir's US commercial revenue reached $764 million last quarter as the company continues to diversify beyond government and defense clients like the FDA, DHS, and ICE.
Hedge fund ownership in Palantir dropped from 96 funds in the first quarter to 86 in the second quarter. Chipotle also experienced a decline in hedge fund ownership, falling from 68 funds to 63 over the same period.
